Set to open on Saturday 23 November 2024, The Savoy’s anticipated new dining destination, officially named Gallery, has released an exclusive first glimpse at the dishes that will adorn its curated menus.

Known as ‘the king of chefs and the chef of kings’, Auguste Escoffier, chef at The Savoy when it opened 135 years ago, influenced the way professional kitchens are run all over the world today. When Gallery opens on 23 November, the all-day dining menu will feature a nod to the culinary pioneer, alongside a variety of grazing and substantial sharing plates showcasing traditional recipes with a modern twist.

Let’s Get Grazing

Gallery’s dining journey unfolds with a crafted selection of starters, as highlights include Sole tacos, combining delicate white fish with Bacchus grape and hispi cabbage, incorporating flavours inspired by Escoffier’s famed Sole Veronique. Cornish lobster rolls with Marie Rose and tangy butterfly sorrel also appear on the line up, in addition to a croque monsieur Savoy style with umami-rich truffle.

Feeling Peckish?

More substantial sharing plates include delicate grilled Cornish tuna tataki with Isle of Wight tomato and yuzu soy, and coronated Orkney scallop served with heritage cauliflower and shallot pakora. Introducing a taste of the Mediterranean to the menu, there is homemade linguine topped with Devon crab and Mylor prawns, and a Vegan lentil bolognaise with roasted Riverford squash and alfalfa sprouts.

Plates to Savour

Big Plates include tomahawk steak and charcoal grilled organic chicken tikka pie, both featuring the finest quality meat from across the British Isles. The classic Arnold Bennett omelette, a Savoy staple, was first created at the hotel for its novelist namesake in 1929. There’s also a selection of stonebaked pizzas made with 24-hour hand stretched dough, from the classic margarita to a more indulgent smoked Scottish salmon with avocado and caviar version. A variety of salads include the popular classic Caesar with chicken or Cornish lobster.

Save Room for Something Sweet

Ice cream sundaes, stacked tall with crushed cookie, crystallised Yuzu and frozen berry toppings, and sauce, will be prepared with a touch of Savoy theatrical flair tableside. No-one will mind sharing dessert at Gallery with generously sized Kent apple crumble, and mille-feuille with Tahitian vanilla Chantilly cream and salted caramel also featured.

Afternoon Tea Returns

It wouldn’t be dining at The Savoy without the famous afternoon tea on the menu. Served for over a century at the hotel, the tradition will of course be making a comeback as part of Gallery’s all-day offering. Executive pastry chef, Nicolas Houchet, and his team will be crafting pastries as beautiful as art, alongside the famous Savoy scones.

As Day Becomes Night

Open until late, Gallery’s bar has curated a cocktail list to perfectly enhance the dining experience (and for those simply in the mood for an after-dinner tipple). Highlights include a British Negroni, combining Somerset brandy, Asterly Brothers’ sweet vermouth and bitters, and a New Fashioned, a rich concoction of Fielden Rye whisky, discard banana and PX. A selection of Petrossian caviar, served with organic Burford eggs, chives, sour cream and blinis will also be served at the bar.

Gallery opens on Saturday 23 November alongside The Florist at The Savoy, offering seasonal bouquets with a thoughtfully curated selection of gift items, and Scoff, the hotel’s dedicated scone shop, which will present a new, surprising, and show stopping take on the classic British baked good.
